1 red bell pepper, sliced
1 medium onion, sliced
2 tablespoons vegetable oil or olive oil
1 teaspoon grated ginger

Step 1: Prepare the Chicken
Place the skinless chicken breasts in a saucepan.
Add garlic, ginger, paprika, thyme, black pepper, salt, and ½ cup of water.
Cover and steam over low to medium heat for about 15–20 minutes until fully cooked.
Allow the chicken to cool slightly, then shred it into thin strips using two forks.
Step 2: Boil the Green Plantains
Wash and peel the green plantains.
Cut into halves or desired sizes.
Place in a pot with enough water and boil for 20–25 minutes until tender.
Drain and set aside.
Step 3: Prepare the Stir-Fried Cabbage
Heat the oil in a large frying pan or wok.
Sauté the onions until soft.
Add the garlic and ginger and cook for about one minute.
Stir in the carrots and bell peppers and cook for 2–3 minutes.
