Grilled Catfish with Roasted Half-Ripe Plantains

This week's recipe is a delicious, protein-packed meal that's satisfying, heart-friendly, and perfect for balanced eating.

Ingredients (Serves 4)

For the Catfish

1 medium fresh catfish (about 500–600 g), cleaned 

o 1 teaspoon garlic, minced 

o 1 teaspoon ginger, grated 

o pepper 

o ½ teaspoon black pepper 

o ½ teaspoon thyme 

o ½ teaspoon seasoning powder (optional) 

o ½ teaspoon salt 

o 1 tablespoon lemon juice 

o 1 teaspoon vegetable or olive oil



For the Plantains 

o 2 half-ripe plantains 

o 1 teaspoon vegetable or olive oil 

o A pinch of salt (optional) 


Optional Side 

o Fresh cucumber slices 

o Tomato slices 

o Lettuce 

o Onion rings 

o Lime wedges

Preparation: 15 minutes || Cooking: 30 minutes  || Total time: 45 minutes

Preparation


Step 1 

  • Preheat the grill or oven t200°C (390°F). 


Step 2 

  • Combine garlic, ginger, paprika, thyme, black pepper, lemon juice, oil, and salt.

  • Rub the mixture generously over the catfish and allow it tmarinate for 15–20 minutes. 


Step 3 

  • Peel the half-ripe plantains and slice them lengthwise or intthick rounds.

  • Lightly brush  with oil. 


Step 4 

  • Place the fish and plantains on the grill or baking tray. 


Step 5 

  • Grill the fish for 25–30 minutes, turning halfway through until cooked and lightly  charred. 


Step 6 

  • Roast the plantains for 20–25 minutes, turning once until golden brown and tender.


Step 7 

  • Serve hot with fresh vegetables and a squeeze of lime for extra freshness.



How to Serve

Enjoy with Fresh cucumber and tomatoes or, a side salad, homemade pepper sauce (optional) This meal makes an excellent lunch or dinner and keeps you full for hours
